Growing up one of my most favorite treats was no bake cookies. These little delights of course contained crisco, sugar and oats. Not very Paleo. So over the years as I became vegan, sugar free and now Paleo I have tweaked this divine no-bake treat. You can start with the basic chocolate recipe and add whatever you like.
1/2 cup cocoa (raw, non-dutch preferred)
1/2 cup xylitol
1/2 cup coconut milk
1/2 cup coconut oil or gras-fed butter
1/4 cup almond butter
1/2-1 tsp pure vanilla extract
Mix ingredients together and on low heat melt the ingredients. Remove from heat and add whatever you desire. Here are a few of my favorites
2 cups of coconut flakes
1 cup of coconut flakes with 1/2 cup almonds and 1/2 cup dried cherries
1 cup mixed nuts, ground into almost a flour consistency and 1 cup whole nuts- this is more like a granola bar
Once you add your filling drop on parchment paper and put in fridge to set, about 1-2 hours. I just keep mine in the fridge so they stay together.
