Antioxidant Orchard Salad

1/2 cup macadamia nuts or almonds
pinch of kosher salt
baby mixed greens
1 stalk of celery, chopped
1 tbs of red onion, chopped
1/2 cup of cucumber, sliced
1/4 cup of fresh strawberries, blueberries and raspberries
Option to add cooked chicken, grilled fish or pasture raised pork loin

1 tea fresh mint, chopped
2 tea pomegranate juice
2 tea lemon juice
1 1/2 tabs olive oil

Toss all together and top with pomegranate, lemon and olive oil dressing
