Coconut Curry

2 tbs coconut oil
1 tbs finely chopped fresh ginger
1 1/2 tsp cumin seeds
1/2 tsp turmeric
2 tsp coriander
1 tsp curry powder
1 tbs tomato paste (optional)
1 can coconut milk
1/4 to 1/2 cup water
2 small zucchini, diced
3 medium carrots, diced
1 cup green beans
Any other approved vegetable you like
1/2 lb stew meat from Grass-fed beef or buffalo
1/2 cup cilantro

In a large pot with oil heat ginger, cumin seeds, and black mustard seeds, cook for 1-2 minutes or so.  Add carrots, turmeric, coriander, and curry powder.  Cook for another minute or so. Add the tomato paste, coconut milk, and water and stir well.  Simmer, covered for 5-10 minutes until and carrots are almost cooked.  Add other vegetables and beef/buffalo and sea salt.  Cover and simmer until vegetables are tender.  Remove from heat and top with cilantro
