Fruit Tarts


1 1/2 cup coconut flour
1/4 tsp sea salt
3 tbs xylitol
4 tbs grass-fed butter, melted

Preheat oven to 325.  Mix all dry ingredients then add butter.  Put into mini muffin tins, bake for 15 minutes.


1/2 cup strawberries, sliced and pureed until smooth with little chunks
1/2 cup rhubarb, sliced and pureed into chunks
1/2 cup xylitol
2 tbs agar agar
1 tbs grass-fed butter
Dash of vanilla

Put into pan and cook over medium heat until bubbling and becomes thick.  Fill crusts and bake at 325 for 15 minutes. 

I feel that this would also be good with in season local Palisade Peaches or apples.  Sub the strawberry and rhubarb for peaches or for apples.
