Sweet Potato Bake with Greens

1 head kale, deveined and chopped or other greens
1.5 lbs of sweet potatoes
2 pasture raised chicken breast

Alfredo sauce

1 1/4 cup almond or coconut milk
1/3 cup raw cashews, unsalted
2 tbs grass-fed butter 
1 tbs lemon juice
1/2 tsp Dijon mustard
1/4 tsp ginger powder
1 pinch of nutmeg
3/4 tsp dried thyme
1/2 tsp paprika, sweet or smoked
Black pepper to taste

Almonds ground into chunks to top (optional)

Preheat oven to 400 degrees. Heat saute pan with grass-fed butter and olive oil, add kale and cook until tender and bright green, drain and set aside.

Chop sweet potatoes, chicken into bite-sized pieces.  Combine all Alfredo ingredients and blend until smooth.  Combine all ingredients except almond crumbs together, stir well and place in baking dish, top with breadcrumbs. Bake 20 minutes until hot and bubbling.
