Taco Salad

1/2 lb ground grass-fed beef
1 heirloom tomato
1/2 green pepper, diced
1/2 red pepper, diced
Avocado, sliced
1 cup lettuce any variety
 

Non-Dairy Taco Cheese

1 cup unsweetened coconut milk
3/4 cup cashews, ground to little pieces
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground cumin
1/4-1/2 tsp paprika
1/4-1/2 tsp chili powder or cayenne
1/4 tsp salt

Mix spices in with cashews in food processor and blend until cashews are a fine powder.  Add coconut milk and heat on stove until thickens
