Shrimp Fried Cauliflower Rice

1 tbs grass-fed butter
1/4 cup shallots, diced
1/2 cup red peppers, diced
1/2 cup green peppers, diced
1 large carrot, diced
2 cups shrimp, peeled and de-veined
3 tbs coconut aminos
3 drops of fish sauce
1/2 tbs sesame oil
1 egg, whisked
4 cups cauliflower, grated on cheese grater
1/4 cup green onions, diced
Salt and Pepper to taste

Saute shallots, red peppers, green peppers and carrots for 3-4 minutes.  Add shrimp, aminos, fish sauce, sesame oil and sauté until shrimp is pink.  Add egg and scramble.  Add the cauliflower and green onions. Mix well and season with sea salt and pepper.  

I also add chicken from time to time and pork meatballs (recipe below) 

Pork Meatballs

1 lb ground pork
6-8 shrimp, peeled and de-veined
1/8 cup green onions, chopped
salt and pepper to taste
1 tbs ginger, chopped
1 tbs garlic, chopped
2 drops fish sauce
2 tbs coconut aminos
2 tbs grass-fed butter

MIx all ingredients except the butter.  Form into balls and sauté in grass-fed butter until cooked through.  Add to fried rice or chicken broth with a dash of amios and fish sauce.  It's like wonton soup without the wrap.
