Bacon Egg Salad

1-2 pasture raised eggs, soft boiled
4 slices of pasture raised bacon
4-6 spears of asparagus
1 shallot, thinly sliced
1-2 cups of micro greens or baby leaf lettuce
Balsamic Vinegar, reduced 

Cook bacon until lightly crisp, add shallot and asparagus, toss for 1-3 minutes.  Put on top of lettuce, add sliced soft boiled egg and drizzle with balsamic vinegar.
