Eggs Many Ways

Let's face it having the recommended 4+ egg yolks from pasture raised chickens a day can get very dull and boring.  

Aside from poached or over easy eggs with the occasional hollandaise sauce here are a few fantastic ways to get your daily egg dose.  When cooking egg yolks make sure to keep the yolk as uncooked as possible.  When egg yolks oxidize it increases the bad cholesterol and inflammation so keep em runny! 

Cowboy Hashbrown Skillet

Serves about 6
Grass-fed butter for the pan
2 green plantains, peeled and grated on a box grater
1 large yellow onion, diced
1 lb fresh chorizo sausage
6 eggs
2 ripe avocado
Salsa (store bought is fine)
Hot sauce (optional)
Sea salt to taste

Preheat oven to 350.  In a cast iron or oven safe casserole dish, crumble and brown the chorizo.  Heat a few tbs of butter in a skillet over medium heat.  Add the plantains and onion, season with salt.  Stir occasionally, cook until browned, about 12 minutes.  Add the chorizo and stir to combine.  Use a spoon to create 6 wells.  Crack an egg in each well.  Place the skillet in the oven and cook until the eggs are set, about 8 minutes.  Carefully remove from the oven, and top with diced avocado, salsa and a few drops of hot sauce.

Sausage and Eggs to Go

1 lb breakfast sausage or six slices of thick cut bacon
6 pasture raised eggs
1 green onion, sliced
Sea salt to taste

Preheat oven to 350.  Divide the sausage into 6 portions, and place each into its own individual ramekin.  Use your hand to push the sausage around the bottom and up the sides of the ramekin, creating a "crust" for the egg to bake in.  If using bacon wrap the bacon around the sides of the ramekin, put a little butter on the bottom of the ramekin.  then crack the egg in the ramekin.  Crack an egg into each sausage crust.  Bake until the eggs are set, about 25-30 minutes.  Try not to over cook the egg yolk.

Western Omelette to Go

6 slices of Prosciutto   
6 eggs
2 tbs bell pepper, finely chopped
2 tbs yellow onion, finely chopped
Sea salt to taste

Preheat oven to 350.  Line muffin tin with Prosciutto.  In a bowl whisk together eggs, peppers, onion and sea salt.  Pour egg mixture into Prosciutto lined muffin tins and bake for about 15 minutes.

Eggs Poached in Marinara

Eggs, as many as you want to serve
1 cup marinar per egg

Put marinara in a skillet over medium heat.  Heat until slightly bubbling.  With a spoon make slots for the eggs.   Place eggs in slots and cover skillet.  Cook until whites are cooked through and yolks are runny and serve.

Basil Eggs Ringed in Bell Peppers

1 bell pepper, your color choice, cut into 1/3 inch wide rings
Grass-fed butter for the pan
Basil, fresh, one leaf for each ring
1 egg for each pepper ring
Sea salt to taste

Heat your skillet to medium low, add a couple tbs of butter, put down rings and allow to cook on each side for a few minutes.  Place basil leaf on the bottom of the pepper ring and top with an egg.  Press the top of the pepper ring down with your spatula to prevent the egg from coming out of the bottom.  Allow eggs to cook until whites are cooked through but the yolks are runny.  Best way to do this is to cover skillet with a lid. Top with sea salt.
