Plantain Poppers

Makes about 8 poppers

1 plantain, cut into 1/2 inch rounds
1 avocado
6 pieces of bacon, cooked
Sea salt to taste
Coconut oil

Cook bacon in a skillet until crisp.  Drain on a paper towel.  Fry plantains in bacon grease, (add more coconut oil if needed) on both sides until brown about 2-3 minutes each side.  Sprinkle with sea salt.  Remove from oil and smash with a plate.  Top plantain with a piece of bacon and avocado. 

It think these would be even better with an aoli sauce or some other kind of dressing.
