California Kale Cobb Salad

This beautiful cobb salad was created by my friend who is Calfornia native and now Denver local foodie.  She makes delicious nutrient-dense Paleo recipes, which are often featured on Rooted In Nutrition.  Keep your eyes peeled for her next delicious creation.  

1bunch of organic kale
4-5 pieces of nitrate-free bacon
1 c diced asparagus
1/2 c diced string beans
1/2 red onion (diced)
handful of grape tomatoes (quartered)
1/4 cup diced green onion.
1 c cooked chicken breast.
1 avocado (cubed)
sea salt to taste


cook bacon until crispy and set aside. reserve bacon grease.
dice asparagus, beans, onions, and tomatoes.
sauté in bacon fat (add tomatoes and green onion last so they don't overcook)
add chicken breast. mix well and set aside.
finely chop kale. mix in a large bowl with dressing.
add chicken and veggie mix.
add bacon and avocado.

3 cloves garlic (minced)
juice of 2 limes
2 tbsp mct oil (or evoo)
1 avocado
1/4 c green onion (diced)
sea salt to taste

*put all ingredients in food processor until smooth
