Chicken Salad

My husband loves the chicken salad from Whole Foods so this was totally inspired by that.  As always Paleo if you use the right kind of mayo and grapes are totally optional.   


1 cup mayo
4 tsp apple cider vinegar
5 tsp raw, local honey
2 tsp poppy seeds
Salt and pepper


2 lbs chicken breast, cubed and cooked
3/4 cups pecans, toasted
2 cups red grapes, sliced
3 stalks celery

Mix together and eat in a lettuce cup, dip into it with veggie sticks or put it on top of greens and sprouts.
