Chicken Salad with Apricots and Almonds

A little sweet, a litte savory, a little crunchy and yup Paleo.  Great for lunch espcially the kids lunch box.

1 chicken breast grilled or cooked through, cubed
Course salt and ground black pepper
1/3 cup raw, full-fat, organic yogurt
1 tbs Dijon mustard
1 tbs minced chives
2 tbs apricot
2 tbs chopped and toasted almonds

Mixed together and put in lettuce cup, scoop up with veggie sticks or put on top of greens and sprouts.
