This soup was something I made on a whim and it turned out to be delicious. I have seen and made many versions of this soup, but this one was the best by far. A perfect Paleo soup highlighting garden fresh kale, onions and homemade stock.
I started with 4 cups of my homemade chicken soup stock (bone broth)
1 medium onion, diced
1-2 potatoes, both sweet and regular
1 bunch of kale
4 chorizo sausage, cut into 1 inch pieces
1 can full-fat coconut milk or cream
Red pepper flakes
Saute potatoes and onions in butter until slightly golden and onions become translucent. Add chicken stock, kale, sausage, coconut cream and season to taste.
