Buckeyes/Nut Butter Cups/Chocolate Almond Balls

These paleo friendly, deliciously delightful little balls of heaven remind me of my mother-in-law and her midwest buckeyes.  I love taking old family recipes and making them paleo friendly! These help satisfy my 20% soul food and are made without all the artifical sugars and added junk. Great for parties especially around the holidays.

Makes about 60 
1 1/2 c. raw almond butter, salted.  If not salted add 1 tsp sea salt
1 cup grass-fed butter, softened
12 Tb maple syrup
1 tsp vanilla extract

Place in pastry bag (make one by taking a gallon size zip lock back and cutting the tip off) and drop on parchment paper on cookie tray. Create bite sized balls.  Place in freezer for 1/2 an hour or until very firm. 

Chocolate sauce

1 c. coconut oil
1/2 cup of raw cacao powder
1
 packet stevia
pinch of salt

On low heat mix ingredients and melt coconut oil.  Remove and let coo, but not so coconut oil hardens.  Remove almond butter ball from freezer, top with chocolate ( I simply drop them into the chocolate and place them back on the tray), return to freezer.  Let set for 5-10 minutes.  Option to repeat topping with chocolate.  I keep mine in the freezer since the coconut oil can melt at warmer room temperatures.
