3 cups organic fresh apple cider
1/4 cup agar flakes (or gelatin)
1 cinnamon stick
3 clove buds, crushed
2 tbs coconut milk
2 1/2 tbs raw agave nectar
1 small granny smith apple, diced
1 small honey crisp apple, diced
Pour apple cider and agar flakes into small saucepan. Let sit for 10 minutes. Add the cinnamon stick and crushed clove buds. Slowly bring to a boil, whisking several times. Reduce heat and simmer for 10 minutes more, checking to make sure the cinnamon stick and cloves are not sticking to the bottom of the pan. Remove the cinnamon stick, add coconut milk and agave nectar, stir and turn off heat. Evenly distribute apples into four small glass bowls. Add hot liquid to bowls. Wait until steam is no longer rising from the bowls, place in fridge until they are firm, 30-40 minutes.
