Sun Dried Tomato "Pasta"

This use to be one of my favorite dishes when I was eating pasta, like every day.  What a crazy vegan I was!  Now this dish is made Paleo by substituting the pasta for kelp noodles or zucchini cut into strips.  Still has all the flavor without the bloat. Enjoy! 

3 cups kelp noodles (rinsed) or zucchini cut into strips
2 tbs olive oil
1-2 garlic, cloves minced
1 lb ground buffalo or beef
1/4 cup onions, sliced or diced
1 bunch of kale, chopped
1/2 cup oil packed sun-dried tomatoes, cut into strips
1/3 cup ground nuts
Pinch of salt
1/4 to 1/2 tsp red pepper flakes
2 cups flat leaf parsley, chopped
Zest form 1 lemon
1 tbs olive oil
1/4 tsp salt
Black pepper to taste

Saute garlic for 30 seconds, add ground almonds, add pinch of salt, stir well.  Let sit on low/medium low heat for 5 minutes, until nuts become crispy.  Remove and set aside.  Place sun-dried tomatoes into pan with onions, kale, ground meat and red pepper flakes.  Saute until vegetables are tender and meat is cooked.  Pulse parsley until chunky but not whole pieces, add lemon zest.  Add olive oil, salt, parsley/lemon mixture.  Toss everything but ground nuts together including kelp noodles or zucchini noodles. Top mixture with ground nuts and black pepper.
