Pizza is something my hubs loves and well I love too, but the pizza crust always makes me feel terrible. A true Paleonista does not eat any dairy or grains so pizza is really no longer on their menu. I however, believe that dairy should be eaten based on your individual reactions. If you have no intolerance to dairy please choose grass-fed, full-fat cheese for your pizza. If you are intolerant to dairy try making this pizza without cheese and see how it tastes. If you don't like the beef crust listed below, give this cauliflower crust a try. It's delicious. Ok without further ado here is your Primal/Eat Well Pizza!
1 lb of 80% ground beef, of course grass-finished or the Cauliflower Crust
1 cup or more of the roasted eggplant marinara, pureed or store bought sauce
10 large slices of pepperoni
1/2 cup sliced green peppers
1/2 cup sliced pineapple
1 cup full-fat, grass-fed, organic mozzarella - I like Organic Valley Raw Mild Cheddar
Feel free to use any toppings you want
Form beef into a large patty, size of a pizza pan, about 1/4 inch or more thick. Top beef patty with marinara sauce then pizza toppings and finally with cheese. Bake at 400 degrees for 30-40 minutes until cheese is golden brown and bubbling. Let pizza sit for a few minutes before cutting and serving.
