Vegan Queso

This dip is perfect for any party.  Make it different by adding something new to it with each batch.  Try adding avocado, fresh salsa, hot peppers, fresh corn from the cob, ground beef, chorizo sausage or chicken breast.  Fry up some sliced potatoes or plantains in bacon fat for dipping.  

1 cup unsweetened coconut milk
1/2 cup cashews, ground into a fine powder
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground cumin
1/4-1/2 tsp paprika
1/4-1/2 tsp chili powder or cayenne
1/4 tsp salt

Grind the cashews until they are a fine powder add spices and mix.  Put all ingredients together in a saucepan.  Bring to a boil over medium heat, stirring often.
