Breakfast Sandwiches

Paleo Pancake topped with bacon, turkey sausage and an over easy pasture-raised egg. Option to add a little coconut nectar on top or if tolerated some grass-fed cheese (Organic Valley Raw Cheddar is my favorite). 

Fried Plantain patty topped with a turkey sausage, an over easy pasture-raised egg, avocado and another fried plantain.  Option to add some grass-fed cheese (Organic Valley Raw Mild Cheddar), tomatoes or sriracha.  

Fried Plantains
1 green plantain peeled and cut into 1 inch chunks.  Boil for 10 minutes until tender.  Smash pieces between 2 plates making them flat.  Fry up in some coconut or palm oil until crispy.  Season with sea salt.
