Breakfast Bowls

4 Pasture-raised eggs, scrambled
1 bunch of spinach or other dark leafy green
1 small sweet potato or left over Kabocha squash (maybe from the arugula salad?)
Sea salt and pepper option to add some bacon, or ground meat of any kind.
I like to cook each ingredient separately in some coconut oil, MCT oil and/or grass-fed butter, then mix them all together before serving. 

Fried plantains with kale, avocado and ground pork. 
I like to fry the plantains first in about 1/4 cup of coconut oil, remove them from the oil and drain and season with season salt.  I then add the kale and pork to the coconut oil and heat up.  I mix the plantains in and add avocado and enjoy!

Brussels sprouts with Boar's Head turkey and/or Applegate turkey sausage.  I fry the sprouts in about 4 tbs of coconut oil and add the meat at the end, just to warm it up.  I often have a side of bone broth as well.
