I was looking for a Paleo cornbread to go with some chili I made. I stumbled upon this recipe, which was an awesome cornbread recipe that I thought might make a good pancake...I was totally right! These are the first fluffy, don't fall apart, delicious Paleo pancakes I have ever eaten.
1 cup almond flour
1 cup coconut flour
1 tsp sea salt
1 tsp baking soda
4 tbs ghee or regular butter, melted
4 tbs coconut oil, melted
1 cup unsweetened almond milk
Mix the dry ingredients, add the wet ingredients and whisk together. Cook up in some bacon grease for some added flavor. I like to top mine with lots of grass-fed butter and coconut nectar.
